Couscous production lines: the world leader keeps on innovating
Clextral has developed the automation of couscous production (under brand Afrem). Since the early 1970s, turnkey couscous production lines have been installed mainly in France, North African countries like Algeria or Morocco, Italy, the United States and Canada. Over the years, our engineers and technicians have constantly been completing development projects to enhance the different parts of the line and the process itself to obtain the highest final product quality. Today, Clextral is the world leader in the supply of industrial couscous production lines and supplied the highest capacity line ever commissioned, producing 3200 kg/h. In 2009, a 500 kg/h couscous production has been launched. What is couscous? How industrial couscous is produced?

Couscous or “Moroccan pasta” as it is also called sometimes is a product that does not need to be cooked and is prepared in 5 minutes by simple re-hydration. It’s growing success lies in this quick and convenient preparation, its taste and versatility. From an ethnic food originating from North Africa, it is now spreading the world.
Couscous is an agglomerated and precooked cereal based product commonly made from durum wheat or from other cereals like for example pearl millet, corn, soft wheat semolina, rice flour…
Couscous can be served hot as a substitute to pasta, rice or potatoes or chilled and stirred into marinated salads with vegetables or fruit. Sweet couscous is also delicious. For child preparation, water can be replaced by milk, soup or broth.
